Kasauli has always been one of those hill stations that rewards the traveller who looks beyond the obvious. Its charm is quieter than Shimla’s, more intimate than Manali’s, and it has a quality of genuine peace that the more famous destinations have largely lost. Brook & Pines was conceived in precisely this spirit: a place of genuine quality, conceived with care, that adds something to the experience of being in Kasauli rather than simply extracting value from the tourist traffic.
To call Brook & Pines Kasauli’s most unique dining experience is a claim we make with some confidence, and with specific reasons.
First, the combination of offerings under one roof is genuinely unprecedented in this region. Most restaurants are restaurants. Most breweries are breweries. Most resort dining rooms are resort dining rooms. Brook & Pines is simultaneously Kasauli’s first and only microbrewery, a serious multi-cuisine restaurant with a trained kitchen team, a live music venue, a craft cocktail bar, and a destination dining experience with unobstructed Himalayan valley views. No other establishment in the area offers this breadth, and the integration is seamless rather than disjointed — everything fits together because it was designed as a whole rather than assembled piecemeal.
Second, the quality threshold across every category is higher than you would expect at this altitude. Kasauli dining before Brook & Pines was largely reliable but rarely exceptional. Good thalis, competent North Indian curries, occasional Chinese. Nothing that would make a food-conscious visitor from a major city feel that they had found something worth travelling for. Brook & Pines changed that. Our wood-fired Neapolitan pizzas would hold their own in Delhi. Our dal makhani is as good as the best you will find anywhere in the country. Our craft beers have won admiration from people who follow the Indian craft beer scene closely.
Third, the setting. This is not something we can take credit for in the way we can take credit for our food — it is the gift of the land and the altitude. But we can take credit for how we have used the setting: the positioning of the outdoor terrace to maximise the valley view, the design choices that bring the outside in, the decision to let the landscape speak rather than compete with it through garish décor. Sitting on our terrace as the light changes over the Himalayan ridgeline is an experience that exists nowhere else on earth, and we are grateful every day to host it.
Fourth, our microbrewery is a genuine differentiator. Craft beer culture in India has grown rapidly, but it remains concentrated in large cities. Finding truly good, freshly brewed craft beer in a hill station is a genuine novelty, and the Brook & Pines brewery produces ales and lagers that demonstrate real brewing knowledge. The microbrewery has brought in a category of visitor — the craft beer enthusiast, the young urban professional who follows the craft brewing scene — who would not previously have considered Kasauli as a dining or weekend destination.
Fifth, and perhaps most significantly, is the intentionality behind everything we do. Brook & Pines is not a restaurant that happened; it is a restaurant that was thought through. The sourcing of ingredients from local farms and producers was a deliberate ethical and culinary choice. The decision to install a wood-fired oven and hire chefs who knew how to use it was a deliberate quality choice. The music programme, the menu design, the service training — each element reflects a commitment to creating something genuinely worthwhile.
We are also aware that uniqueness is not the same as exclusivity. Brook & Pines is not trying to be a place that only certain kinds of guests can access. We have family tables and intimate tables. We have beer on tap and fresh juice. We have wood-fired pizza for children and refined cocktails for adults. We want everyone who comes to Kasauli to be able to find a place at our table.
What unifies the experience — across all guest types, all occasions, all seasons — is quality and care. Those are the constants. Those are what make us genuinely different, not just in Kasauli but in the broader landscape of dining destinations in the Himalayan foothills.
