At Brook & Pines, we have become quite good at creating the conditions for that kind of evening. What happens next is up to you.

Let us walk you through what a perfect Brook & Pines evening looks like, from arrival to last call.

You arrive as the light is beginning to change — that hour or so before sunset when the sky turns from blue to gold and the pine forests become silhouettes against the ridgeline. The drive up to Kasauli has taken the city out of your shoulders, and the temperature drop as you climbed through the hills means you arrived wanting something warming and something cold at the same time, which is precisely the state in which Brook & Pines is designed to receive you.

You are seated on the terrace. This is non-negotiable on evenings when the weather cooperates, and even on cooler evenings, the outdoor heaters make it possible. The valley unfolds below you, the Himalayan ridgeline visible in the middle distance, the pine trees swaying in the evening breeze. You have not looked at your phone since you sat down.

The craft beer menu arrives. Our brewer produces four to six beers at any given time, rotating seasonal varieties in and out. Tonight, you are drawn to the wheat beer — light, slightly fruity, with a soft carbonation that is exactly right for the altitude and the air. Your companion takes the pale ale, which has a gentle bitterness that they find satisfying. The pours are generous and the glasses are cold.

Your starter arrives: our Antivirus Cocktail for the table’s non-drinker, and a sharing portion of our wood-fired focaccia with garlic butter and local herb oil. Your companion has the wood-fired Neapolitan pizza with wild mushrooms and truffle oil, and the smell when it arrives makes you briefly regret your choice before a spoonful of dal remedies everything. Another round of beer. The music continues. The valley is dark now, with the lights of distant villages twinkling in the black space below. The stars above Kasauli, far from urban light pollution, are extraordinary. Someone at your table points them out and everyone stops talking for a moment to look.

Dessert is the chocolate tart — house-made pastry, dark ganache filling, served with a quenelle of vanilla ice cream that is slightly salted. It arrives with two spoons. You do not need to ask.

The evening winds down unhurriedly. There is no pressure to leave when the last plate is cleared. A final drink — coffee for some, a digestif for others — and the kind of conversation that only happens when good food and relaxed surroundings have loosened the usual social tensions.
